After founding Denver’s famed Snooze Eatery and successfully growing and selling the franchise, Jon Schlegel and his family decided to move to Italy to live out another dream- learning the craft of making Italian wine. While in Italy, Jon spent his days working and learning in the vineyards and wineries from producers whose families had been making wine in the region for generations. Jon and his family subsequently accrued many fond memories from this experience, of a moment in the vineyard; at a friend’s house, sharing dinner; or on a one-of-a-kind bench in Monferato. “Un Attimo” in Italian means “a moment”, and after returning to his native home of Denver, Jon naturally wanted to bring a piece of this Italian immersion back to share with his home of Colorado allowing others to create moments of their own – thus Attimo was born.

Attimo was driven by a clear creative vision to offer this new urban winery to inspire and share many more of these vivid Italian moments. Housed in the urban shell of a former pawn shop, the team also sought to utilize as much of the existing wood and masonry material from the site as possible. This approach tied in well with our own sustainability goals and also with the northern Italian agrarian ethic. Complimenting the utilitarian aspect of wine-making is the importance and reverence given to the harvest, and realizing the fruits of one’s labors… the tasting of the wine. So there is an intentional dichotomy entrenched within the space.
